I made Stuffed Peppers Vada Pav Today which turned out to be good!!The recipe goes like this:
For the Spicy/Hot Green chutney(Sauce):
Some people prepare Garlic and red chili chutney with it .I prepared my own style.
Ingredients:
10 hot green chillies
1 cup cilantro leaves
1 tbsp tamarind paste
2 tsp Garlic
Salt to taste and a little sugar
Method:
Make a nice smooth paste of all the ingredients.
For the Vada:
Stuffing:
Ingredients:
4 Hot Peppers
2 Boiled Potatoes
1 tbsp Saunf (fennel seeds)
1 tsp jeera powder (Cumin Powder)
1 tbsp Dhania Powder (Coriander Powder)
1 tsp Garlic
Salt and red chili powder according to your taste
Batter:
2 tbsp Besan (Gram Flour)
1 tsp Ajwain (Thyme Seeds)
1 tsp Baking Soda
Salt and red chili powder
Preparation:
1.Mash the Potatoes and mix all the ingredients listed under Stuffing.Mix it well.Fry it for about 5-10 min on medium gas in 1 tbsp of oil.
2.Slit the Peppers in the centre and if you wish you can remove the seeds from inside.I didn't because the peppers I used were not very hot.
3.Stuff the mixture in the peppers and close them properly.Stuff a good amount of mixture.Don't worry if it comes out a little ,you will be coating it with the batter.
4.Stuff all the peppers and keep it in a plate.
5.Prepare the batter mixing all ingredients listed under Batter and keep it aside.
6.Now heat oil in a wok/kadhai to medium hot.
7.Coat the peppers with the batter properly one by one and put it in the wok for deep frying very cautiously.Fry until Golden Brown.
Serve:
1.Apply the chutney/sauce on both sides of the bun/pav depending on how spicy you want it to be.
2.Place a Vada in between the bun and press it.
3.Serve it hot and enjoy a spicy/hot treat.
You will relish it anytime.But you will relish it more in the rainy season with hot spiced/masala tea/chai.
