Quick Healthy Veg Tacos

I remember one of my friends telling me, "Post something that can requires less time."
Tacos are healthy,quick and even taste good :)
Ingredients:
4 Taco Shells
1 cup left over rice
1 onion finely chopped
1 capsicum finely chopped
2 Tomatoes finely chopped
1 cup curd or sour cream
1 cup Lettuce finely chopped
1/2 cup green peas optional
2 cups black beans boiled

Preparation:
1.Fry tha black beans with little salt and red chilli powder. Keep a thick consistency.
2.Add salt and a little vinegar to the lettuce and keep aside.
3.Add salt and red chilli powder/Cumin powder if desired to the chopped onion,capsicum and Tomatoes.
4.Beat the curd/sour cream and keep aside.
5. You can mix the chopped onion,capsicum,tomato with the curd.As i have done here.But keeping them separate tastes better.
Filling the Tacos:
Step 1
Hold the tacos.Put 1 spoon cooked rice,top it with the black beans.
Step 2
On the black beans, put a good amount of chopped tomatoes,
capsicum and onion.Top it with 2 spoons of curd/sour cream.
Step 3
Garnish the tocos with the lettuce and cheese generously.

The tacos are now ready. Serve it immediately before it gets soggy.
Nice party treat. Keep the tacos and all the ingredients in bowls on table.
Let your guests customize it themselves :)

Vada Pav!!



I made Stuffed Peppers Vada Pav Today which turned out to be good!!The recipe goes like this:
For the Spicy/Hot Green chutney(Sauce):
Some people prepare Garlic and red chili chutney with it .I prepared my own style.
Ingredients:
10 hot green chillies
1 cup cilantro leaves
1 tbsp tamarind paste
2 tsp Garlic
Salt to taste and a little sugar

Method:
Make a nice smooth paste of all the ingredients.

For the Vada:
Stuffing:
Ingredients:
4 Hot Peppers
2 Boiled Potatoes
1 tbsp Saunf (fennel seeds)
1 tsp jeera powder (Cumin Powder)
1 tbsp Dhania Powder (Coriander Powder)
1 tsp Garlic
Salt and red chili powder according to your taste

Batter:
2 tbsp Besan (Gram Flour)
1 tsp Ajwain (Thyme Seeds)
1 tsp Baking Soda
Salt and red chili powder

Preparation:
1.Mash the Potatoes and mix all the ingredients listed under Stuffing.Mix it well.Fry it for about 5-10 min on medium gas in 1 tbsp of oil.
2.Slit the Peppers in the centre and if you wish you can remove the seeds from inside.I didn't because the peppers I used were not very hot.
3.Stuff the mixture in the peppers and close them properly.Stuff a good amount of mixture.Don't worry if it comes out a little ,you will be coating it with the batter.
4.Stuff all the peppers and keep it in a plate.
5.Prepare the batter mixing all ingredients listed under Batter and keep it aside.
6.Now heat oil in a wok/kadhai to medium hot.
7.Coat the peppers with the batter properly one by one and put it in the wok for deep frying very cautiously.Fry until Golden Brown.

Serve:
1.Apply the chutney/sauce on both sides of the bun/pav depending on how spicy you want it to be.
2.Place a Vada in between the bun and press it.
3.Serve it hot and enjoy a spicy/hot treat.

You will relish it anytime.But you will relish it more in the rainy season with hot spiced/masala tea/chai.
